I love meatballs and fritters because they are perfect for finishing off leftovers in the fridge. Plus, they are virtually effortless and can even be frozen. I always have homemade Balls or fritters in my freezer to save a lunch or serve when I have unexpected visitors.

  •     1 cup chopped broccoli
  •     1 egg
  •     3 tablespoons of breadcrumbs
  •     ⅓ cup grated cheddar (or mozzarella) cheese
  •     ¼ cup feta or ricotta cheese
  •     ½ tablespoon of dried basil
