Today I will share the recipe of baked potatoes with Parmesan cheese so tasty and crispy that they look like they were fried. Since I published the recipe for the spicy baked potato slices I have become a big fan of the baked potatoes, I like it because it is easy to prepare, it doesn’t get soggy and it is definitely more healthy than the fried version.
If you want to try the recipe, I recommend you to pick some potatoes that are crispy when they are fried. I used the sour variety, although the greengrocers usually don’t sell it under that name, they often sell it as a frying potato. So far I’ve tried the Galician sour potatoes. If you don’t know anything about potatoes, just ask your greengrocer to sell you some good frying potatoes, they will probably give you the right ones.
I also recommend you use a large baking dish, especially if you are planning to make a large quantity of potatoes, ideally no more than two layers in the tray, so they will be crispy and golden. With three layers it is likely that some of the slices will turn out to be soft. Potatoes with cheese can be served as an appetizer with a drink or as a garnish, this time they were the complement of some sautéed mushrooms, but in other occasions I have eaten it with some roast meat or fish.
Ingredients:
- 600 grams of potatoes
- 1 tablespoon of olive oil
- Pinch of salt and pepper to taste
- Freshly grated Parmesan cheese
Preparation:
We preheat the oven to 220 ºC. We wash the potatoes, peel them and cut them in slices of an average thickness, about 4 mm thick. We wash the slices in abundant water to eliminate the excess of starch and we drain them well. Place the slices on the baking tray, add a spoonful of olive oil and a pinch of salt and pepper, do not exceed with the salt because later they will be covered with Parmesan cheese. Stir the potatoes with your hands, make sure all the slices are well covered with the olive oil.
Arrange the slices on the tray trying not to pile them up, the ideal is to form a maximum of two layers of potatoes, the second one will cover the joints or holes of the first layer. Next, we bake the potatoes for 30 minutes or until they are medium-brown. After this time, we take the potatoes out of the oven and turn them over, keeping the order. Sprinkle Parmesan cheese on all the slices and bake them again for 15 minutes more. When the time is up, they should be golden and crunchy. Take the tray out of the oven and serve immediately.
