Ingredients to make Butter Cookies:
- 250 grams unsalted butter
- 480 grams of gluten-free cornflour
- 1 piece of egg
- 150 grams of brown sugar
- 1 tablespoon vanilla
- 1 pinch of cinnamon powder
How to make it:
Start by softening the butter, with the help of a hand blender or an electric mixer. Once the butter is smooth, add the sugar and beat again to incorporate these ingredients.
Once these ingredients are incorporated, add the egg and again integrate perfectly.
Once the egg is incorporated, add the flour little by little. While doing so, sift it to eliminate lumps in the dough.
Finally, add the pinch of cinnamon and again integrate everything perfectly well until you obtain a homogeneous mixture so that the gluten-free shortbread Cookies are uniform.
The dough should be solid enough to handle with your hands. If it is still too watery, add a little more flour.
Now take the dough and flour a flat surface, also take the rolling pin and dust it with flour. Then, start flattening the dough, as you can see in the picture below.
The dough sheet should not be too thin, as the Cookies could be too hard, so the dough should be about 1.5 cm thick.
Once the dough is flattened, cut the Cookies with the help of a cookie cutter or a glass.
You can also use special cutters to make your homemade Christmas or Halloween Cookies.
Take the Cookies and place them on the floured baking sheet, arranging them with a little space between them.
Bake them at 180 °C (350 °F) for approximately 15-20 minutes. When you see that the ends of the cookie are golden brown, the shortbread Cookies are ready.
Tip: Remember to preheat the oven so that the gluten-free Cookies bake evenly.
Once this time has passed, remove them from the oven and let them cool, and that’s it! you can enjoy these delicious gluten-free shortbread Cookies, you can accompany them with a rich chocolate milkshake for an afternoon snack or a warm espresso.
