Easy Dark Chocolate Caramel Pecan Clusters

Today’s recipe, I’m going to show you how to make some really easy and really delicious dark chocolate pecan caramel clusters.

I have taken some pecans and I have just chopped them up into very small pieces with my kitchen knife. I am just finishing off tempering some dark chocolate and I’ll be back in one second.

So I’m just going to get my nice dark chocolate right in chocolate funnel, I am using a fancy chocolate funnel for this, but you can also use a regular funnel or you can use a piping bag, or if you don’t have a piping bag, you can use a little plastic Ziploc type bag, fill the little baggie with chocolate and then just cut off the corner at the bottom and that is perfect as well. What’s nice about this recipe is that we don’t need a chocolate malt.

I’m just going to put a little bit of chocolate down for the base of tray. You can make these as big or as small as you wish. When we go a little bit bigger, I’m just watching the flow as I place this out and you have to put the chocolate first because the pecans have to be sitting in something. and this is tempered, dark chocolate takes about four minutes for it to actually start setting so you want to work rather quickly.

So now I’m ready for our next step. I’ve got my homemade caramel in a little piping bag just with a little tip in, This tip is the same one that you would use for filling doughnuts. And this is a two 30 tip, two three zero. And now a little bit of chocolate right on the top, And this is flowing nicely because I did heat it up with my hand before just before I started the this. And you want to be careful because this will start to flow and you don’t want it going over too much.

Then right away, for our last step, I’m just going to come in with the chocolate again. I just want to get a little chocolate right on the top of Clusters.

If I leave this on the table for a good 10 minutes or so, they will firm up. But because I want to get this done quickly, I’m going to pop this into my fridge for about five minutes.
