Fruit Salad Cake

If there is one dessert that is a must in every home it should be this one and in our grandmothers’ recipe books, it is most certainly the fruit salad cake with its transparent icing. This cake, also being super easy to make, is a delicacy that everyone loves it. It can be served on special occasions as well as during a dinner with a good meal. 

It is also the perfect dessert for weekday evenings when we don’t have time to cook.


  • 2 eggs
  • 2 cups of sugar
  • 2½ cups of flour
  • 2 teaspoons baking soda
  • ½ teaspoons of salt
  • 1 large can of fruit salad with juice

For the sauce :

  • 2 cups of sugar
  • 1 cup margarine
  • 1 cup evaporated milk


  1. Preheat oven to 350 degrees and butter and flour a 9 x 13-inch baking pan.
  2. In a bowl, combine sugar, flour, baking soda, and salt.
  3. Stir in eggs and fruit salad.
  4. Pour into a prepared pan.
  5. Bake for 45 minutes.
  6. In a saucepan, combine sugar, margarine, and evaporated milk.
  7. Bring to a boil and simmer for about 10 minutes. 
  8. Prick the hot cake and pour in the sauce.
  9. Note: You can replace the evaporated milk with a can of coconut milk!
