  • 2 cups of milk
  • 2/3 cup of sugar
  • 1/4 teaspoon of salt
  • 1 egg
  • 1 egg yolk
  • 3 tablespoons of cornstarch
  • 2 tablespoons of unsalted butter
  • 2 teaspoons vanilla extract
  • 30 vanilla cookies
  • 2 large bananas cut into slices
  • 3/4 cup of cream
  • 1/4 cup of powdered sugar
  • 1 teaspoon vanilla extract

Heat the milk, sugar, and salt in a medium saucepan over medium heat until it simmers, stirring occasionally to dissolve the sugar. Meanwhile, beat the egg and egg yolk in a medium bowl until well blended. Add cornstarch until mixed and the mixture is pale yellow and thick.

When the milk mixture reaches full simmer, gradually beat the mixture into the egg mixture to be tempered. Return the mixture to the saucepan by scraping the bowl with a rubber spatula, return to a boil over medium heat, stirring constantly, until a couple of bubbles burst on the surface and the mixture thickens and is shiny. Off the heat, whisk the butter and vanilla.

Strain the pudding through a fine-mesh sieve and cover it with transparent paper to prevent it from drying out.

Cover the bottom of a mold with the crushed vanilla cookies mixed with butter. place the banana slices on top and pour the pudding over the bananas. Leave to cool in the refrigerator for at least 4 hours.
