- 1 teaspoon of powdered cinnamon
- 1 teaspoon of Sugar
- 2 tablespoons of butter
- 200 ml of cream (1 cup)
- 200 ml of condensed milk
- Juice of two lemons
- Grated 1/2 lemon
- 1 envelope of lemon gelatin
- 1 package of Maria cookies (200 grams)
The first thing to do is to prepare the base of the lemon cake. To do this, crush the cookies until they are powdered, you can do it in the blender or with a mixer. Add the sugar and the cinnamon powder and mix everything.
Then, melt the butter and add it to the previous mixture to make the base dough. When you get a compact paste, cover the whole base of the mold you are going to use with it.
Reserve the mold in the refrigerator and begin to prepare the filling of the lemon pie. For it, take a deep container and mix the milk cream very cold with the milk. Then, add the lemon juice and the grating and keep on beating. When it is ready, pour it in the mold and leave it in the refrigerator for four hours, or until it curdles completely.
When it has set, prepare the lemon jelly according to the instructions on the package, place it on top of the cake and put it back in the fridge for two more hours. Afterwards, you can serve your No-bake lemon cake.
