Peanut Butter Sheet Cake with Fudge-like Frosting

Ingredients

For the Cake:

  • 3/4 cup (170g) unsalted butter, cut into tablespoon-sized pieces
  • 1 cup (240ml) water
  • 1/4 cup (60ml) canola or vegetable oil
  • 1/2 cup (125g) creamy peanut butter
  • 2 cups (240g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 3/4 cup (165g) firmly packed light brown sugar
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon table salt
  • 1/2 cup (120ml) buttermilk
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract

For the Frosting:

  • 10 tablespoons (142g) unsalted butter
  • 1/2 cup (120ml) buttermilk
  • 2/3 cup (160g) creamy peanut butter (avoid natural style)
  • 1/4 teaspoon salt (heaping)
  • 4 cups (480g) powdered sugar, sifted if desired
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 13×9-inch baking pan and set aside.
  2. Prepare the Wet Mixture: In a medium-sized saucepan, combine the butter, water, and oil. Heat over medium heat, stirring occasionally, until the butter is melted. Then, increase the heat to medium-high and bring to a boil. Remove from heat and stir in the peanut butter until smooth.
  3. Combine the Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt.
  4. Combine Wet and Dry Ingredients: Gradually stir the peanut butter mixture into the dry ingredients until well combined. Set aside to cool for 5-10 minutes.
