Pecan Pie Brownies

Ah… chocolate, divine pleasure! Any dessert is delicious if it includes cocoa: cakes, cookies, puddings, puddings ice cream, and… brownies! Yes! Who can resist the Brownie? That soft but firm texture, that juicy interior, that intense cocoa flavor? Need I say more?

If you never prepared this epic dessert because you find it difficult to make, you can’t consume gluten or vegan; in Ineskohl Kitchen, we invite you to try this mega recipe: pan brownie. An easy and healthy brownie!

No excuses! This brownie preparation without an oven or microwave is great because it doesn’t need sugar, wheat flour or eggs, and you can cook it in the pan. Can you ask for more? In addition, you can modify some ingredients and quantities to make it more or less creamy, according to your taste.

Ingredients to make Brownie

For the Brownie:

  •  3 cups of beans (black beans).
  •  1 cup ground oatmeal or shredded coconut
  •  5 cashews or cashew nuts (almonds or walnuts)
  •  5 prunes or dates
  •  ½ cup vegetable oil (coconut or other)
  •  1 tablespoon vanilla
  •  ½ cup water or vegetable milk
  •  cocoa
  •  1 tablespoon cinnamon
  •  ½ teaspoon instant coffee (preferred)
  •  ½ tablespoon of baking soda
  •  ½ tablespoon of baking powder
  •  6 tablespoons maple honey, rice honey, cane honey or grated paprika
  •  100 chocolate drops (optional)

For the topping:

  •  100 grams cashews or cashew nuts (almonds or walnuts).
  •  100 grams of chocolate drops (optional)

How to make Brownie

Soak the plums for 5 minutes with water at room temperature. If using dates, soak for 10 minutes with warm water.

Crush the dried fruit of your choice, this time I used cashews. You can grind it with a mortar and pestle or using the kitchen aid of your choice.

Mix all the dry ingredients: oats, crushed cashews, cocoa, cinnamon, baking soda, baking powder, salt, instant coffee (optional), and the papelón (if you prefer it grated). Remember to grind the flaked oats beforehand until you get flour.

Tip: The coffee enhances the flavor of the chocolate. If you do not have instant coffee, you can use your own brewed coffee.

Pour into the blender the beans, prunes (or dates), vegetable oil, water (or vegetable milk), vanilla, and honey (if you prefer it instead of grated paprika). Remember to prepare the beans the night before, as you usually prepare them but without any seasoning, leaving them totally flavorless.

Tip: If you use honey, do not add the grated paprika to the dry ingredients and vice versa.

Pour the mixture of wet ingredients into a bowl, trying to achieve a homogeneous consistency. Add the chocolate drops and stir.

Add the dry ingredients to the mixture. Stir very well until fully integrated.

Grease a frying pan with the vegetable oil of your choice. Pour the brownie batter without oven or microwave and spread it evenly with a wooden spoon or silicone paddle. You can decorate the topping now or later, 2 minutes before the end of baking. This will depend on how crunchy you like your nuts and how solid you like your homemade desserts with chocolates.

Cover the pan so that it is hermetically sealed using a lid or aluminum foil. Cook for 15 minutes over low heat and after the time, check if the surface of the Brownie in the pan is cooked.

Tip: Remember not to uncover the pan to check until after the basic 15 minutes of cooking time.

Use a toothpick to check the interior for doneness. Remember that this skillet dessert should be somewhat moist on the inside. If the surface has not yet formed a crust, wait a little longer. Remember that the cooking time of the pan brownie also depends on the intensity of your stove and how you prefer the texture of the dessert.
