  • 1 boneless 900 g (2 lb) beef chuck roast
  • 15 mL (1 tbsp.) olive oil
  • 180 mL (3/4 cup) beef broth
  • 80 mL (1/3 cup) maple syrup
  • 1 onion, sliced into rings
  • 4 Nantes carrots, cut into pieces
  • 8 new potatoes
  • 1/2 small rutabaga, cut into cubes

Steps

  1. In a bowl, mix the onion powder with garlic powder, mustard, and thyme—season with salt and pepper.
  2. Remove excess fat from a chuck roast.
  3. Heat oil in a skillet over medium heat. Sear chuck roast for 1 to 2 minutes on each side.
  4. Transfer the roast to a plate. Brush both sides of the roast with a mustard mixture.
  5. Place roast in the slow cooker. Add broth, maple syrup, and vegetables.
  6. Cover and cook on low for 8 to 9 hours, until meat flakes easily with a fork.
