Smothered Chicken

This recipe for stewed chicken comes from my home country: Portugal. There, you will find it under the name of “Frango abafado.” The stewed chicken will give you a tender and moist meat, not at all dry. This is a recipe that should conquer a good number of your guests.

Preparation time: 20 min

Cooking time: +/- 1 hour

Ingredients for 6 persons:

  • 1 large free-range chicken
  • 1 20 baby onions
  • 3 onions
  • 3 tomatoes
  • 150 g of bacon
  • 1 glass of port wine
  • olive oil
  • salt and pepper


  1. In an ovenproof dish, put the whole peeled onions, and the tomatoes cut into quarters. Add the bacon. Place the chicken on top. Season with salt and pepper and drizzle with olive oil. Cook in a hot oven for about 20 minutes.
  2. Pour a glass of port wine over the chicken and cover it with a sheet of aluminum foil. Finish cooking in a medium oven for 45 minutes (more or less depending on the size of your chicken, of course).
  3. Serve with a pan of vegetables and/or fried potatoes…
