Strawberry Cake

Everybody loves strawberries, they’re the cute little sinners of the summer! Discover our recipe for a strawberry cake to be served as a dessert or snack, time to enjoy.

  • 300 g flour
  • 225 g of sugar
  • 170 g butter
  • 3 tsp. baking powder
  • 4 small egg whites
  • 25 cl of milk
  • 8 tbsp. strawberry syrup

For the cream

  • 250 g of Mascarpone
  • 125 g strawberries
  • 75 g sugar
  • 1 sheet of gelatin


  1. Beat the soft butter and sugar for 1 minute, then add the egg whites one after the other. Then, still whisking, add the flour and milk alternately.
  2. Place an 18 cm circle on a baking sheet lined with baking paper and fill with about 1/4 of the dough. Bake for 12 minutes in a preheated oven on the 6 (180 °C). Then repeat for 3 more cakes. Let them cool down.
  3. Then soften the gelatin in cold water. Then mash 3 strawberries and heat them in a small saucepan. Remove from the heat and add the drained gelatine. Chop the rest of the strawberries and mix with the mascarpone, sugar, and cooked strawberries.
  4. Cut 4 discs out of each cake and brush them on one side with strawberry syrup. Layer them in layers of 4, filling them with strawberry cream, and cover them completely with the remaining cream. Reserve 2 hours in the refrigerator.
