Strawberry Lemonade Bars

This is a dessert that is super enjoyable for two reasons… First, the sweet and sour mix is absolutely sublime… Second, it’s 24 bars so you’ll be having so you’ll have them for a long time 😉

Ingredients:

Crust:

  • 1 1/2 cups (375 mL) flour
  • 1/4 cup (65 mL) sugar
  • 1/2 cup (125 mL) butter
  • 1/4 teaspoon salt

Topping:

  • 1/2 cup [125 mL] pureed strawberries [about 3/4 cup when whole].
  • 1 cup [250 mL] fresh lemon juice
  • 1 1/4 cups [315 mL] sugar
  • 4 large eggs
  • 2 teaspoons lemon zest
  • 1/4 cup [65 mL] flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • optional] powdered sugar

Preparation:

1. Preheat oven to 350°F [176°C]. Grease a 9 x 13 Pyrex pan well.

2. In a large bowl, cream sugar and butter with your mixer.

3. On low speed, add flour and salt.

4. Press well into the bottom of the dish.

5. Bake for 17 minutes.

6. In your blender, combine lemon juice, zest, strawberries, sugar, and eggs. Turn on PULSE until smooth.

7. Add flour, baking powder, and salt. Stir to combine.

8. Add on top of crust and return to oven for 24 to 27 minutes.

9. Let it rest.

10. Sprinkle with powdered sugar.

11. Slice into squares.

12. Store in refrigerator.
