Teriyaki Chicken Recipe

  • 4 boneless chicken thighs
  • 2.5 tablespoons of Japanese soy sauce or Shoyu
  • 2 tablespoons of Sake for cooking
  • 2 tablespoons Mirin 
  • 1 tablespoon brown sugar
  • 2 slices of ginger (optional)
  • 1 spring onion
  • sunflower or vegetable oil

How to make teriyaki chicken with rice

Prepare the teriyaki sauce

  1. In a small saucepan, mix the soy sauce, Sake, Mirin, and sugar.
  2. Put on high heat and mix well for a couple of minutes with a spoon until the sugar dissolves.
  3. Turn off the heat and set it aside.
  4. Sauté the chicken
  5. Cut the boneless chicken thighs into large bite sizes, making sure they are all the same size so that they are cooked evenly.
  6. Add a couple of tablespoons of oil to a frying pan and sauté the chicken over medium-high heat to brown on all sides.
  7. Add the spring onion, chopped on the green side, and sauté with the chicken.
  8. At this time we also sauté the peeled ginger to add flavor to the chicken.

Add the teriyaki sauce to the chicken

  1. Once the chicken is browned, remove the ginger.
  2. Add the reserved teriyaki sauce to the pan, allowing it to reduce by half, about 10 minutes.
  3. Stir the sauce with the chicken, and you will see that little by little the sauce will thicken and “lacquer” the chicken, giving it that characteristic teriyaki shine.

How to serve the Teriyaki chicken

  1. Serve the chicken in bowls, sprinkling toasted sesame seeds on top. The ideal, in this case, is to accompany it with white rice, which can be Basmati, wild rice or the variety that we like the most. We prefer to serve it in separate bowls so that everyone can serve themselves as they like, but another option is to prepare a bed of rice and put the chicken with the teriyaki sauce on top.

It also goes very well with some type of vegetable, such as cooked broccoli, to which the teriyaki sauce also adds an incredible flavor.
