- 2 pounds boneless skinless chicken breasts cut into approximately 1½-inch pieces
- 2 28-ounce cans baked beans, not drained
- 8 slices thick-cut bacon cooked until crisp and crumbled
- ⅓ cup packed light brown sugar
Cook the bacon in a skillet over medium heat until crisp. Transfer it to a paper towel-lined plate, let the excess grease drain, and crumble the bacon.
Pat the chicken dry and cut it into approximately 1½-inch pieces.
Pour both cans of baked beans, including the sauce, into a large mixing bowl. Add the brown sugar and stir until well combined.
Add the chicken pieces and half of the crumbled bacon. Fold everything together until the chicken is coated with the bean mixture.
Transfer the mixture to a 9×13-inch baking dish. Spread it into an even layer and sprinkle the remaining bacon over the top.
Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
Remove the foil and bake for another 15 to 20 minutes, or until the beans are bubbling and the thickest chicken pieces reach an internal temperature of 165°F.
Remove the casserole from the oven and let it rest for 10 minutes before serving.
- For the juiciest chicken, cut the pieces to a similar size and begin checking their internal temperature after about 45 minutes of total baking time.
- Do not drain the canned baked beans. Their sauce provides the moisture needed for the casserole.
- If your brand of baked beans is already very sweet, reduce the light brown sugar from ⅓ cup to ¼ cup.
- Boneless skinless chicken thighs can be substituted for chicken breasts using the same amount.
- Cook the bacon before assembling the casserole. Crisp cooked bacon gives a better texture and prevents excess bacon grease from collecting in the bean sauce.
- Let the casserole rest for about 10 minutes after baking. The sauce will thicken slightly as it sits.
