Ingredients
  

  • 6 to 8 slices thick-cut bacon chopped
  • 1 medium onion finely chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 cups chicken broth
  • 2 cans navy beans drained and rinsed
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • Chopped parsley for garnish

Instructions
 

  • Cook bacon in a large pot until crisp. Remove and set aside, leaving some drippings.
  • Add onion, carrots, and celery; cook until tender.
  • Stir in garlic, tomato paste, paprika, thyme, and bay leaf; cook 1 minute.
  • Add broth and beans. Simmer 25–30 minutes.
  • Blend part of the soup for a creamy texture, if desired.
  • Stir in vinegar and bacon. Season to taste.
  • Serve warm with parsley and bread.
