Ingredients
  

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 10 ounces mini marshmallows
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

  • In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely smooth.
  • Remove from heat and stir in peanut butter, vanilla, and salt until blended.
  • Gently fold in Rice Krispies until evenly coated.
  • Let the mixture cool for 5–10 minutes, then roll into 1-inch balls.
  • Place the balls on a parchment-lined baking sheet and chill for 30 minutes.
  • Melt chocolate chips and coconut oil together until smooth.
  • Dip each ball in chocolate, letting excess drip off, then place back on the parchment.
  • Add toppings if desired. Chill until set.

Notes

Store: Refrigerate in an airtight container for up to one week.
