Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 6-ounce box herb-seasoned stuffing mix
  • 1 10.5-ounce can cream of chicken soup
  • ½ cup sour cream
  • ½ cup chicken broth

Instructions

  • Lightly spray the insert of a six-quart slow cooker with nonstick cooking spray.
  • Place the boneless skinless chicken breasts in a single layer across the bottom of the slow cooker.
  • In a medium mixing bowl, stir together the cream of chicken soup, sour cream, and chicken broth until smooth.
  • Spread the cream of chicken mixture evenly over the chicken breasts.
  • Sprinkle the dry stuffing mix evenly over the creamy sauce. Gently press the stuffing into the sauce with the back of a spoon. Do not completely stir everything together.
  • Cover and cook on LOW for four to five hours, or until the chicken reaches an internal temperature of 165°F and is tender.
  • Leave the chicken breasts whole for serving, or shred the cooked chicken with two forks and gently stir it into the stuffing and sauce.
  • Allow the chicken and stuffing to rest for five minutes before serving.

Notes

  • Use completely thawed chicken breasts for this recipe.
  • Chicken breast thickness can change the cooking time. Begin checking the chicken around the four-hour mark.
  • If the stuffing looks dry, add two to four tablespoons of warm chicken broth.
  • If you prefer more texture in the stuffing, avoid stirring it until the chicken is fully cooked.
  • Store leftovers in an airtight container in the refrigerator for up to three to four days.
  • This crockpot chicken and stuffing is just the kind of dinner that works when you need something simple but still want a warm, filling meal. Tender chicken, creamy sauce, and soft herbed stuffing come together in the same pot with almost no cleanup.
  • Add a green vegetable or carrots on the side, and dinner is ready.
