CROCKPOT MISSISSIPPI POT ROAST RECIPE

This Crockpot Mississippi pot roast combines tender chuck roast with ranch seasoning, au jus, butter, and pepperoncini for an easy slow cooker dinner packed with savory flavor.

Ingredients
  

  • 6 tablespoons unsalted butter divided
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 to 3 pounds boneless beef chuck roast
  • 1 tablespoon minced onion flakes
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 6 to 10 whole pepperoncini peppers
  • Chopped fresh parsley for optional garnish

Instructions
 

  • Heat one to two tablespoons of butter in a large skillet over medium-high heat.
  • Lightly season both sides of the chuck roast with sea salt and black pepper. Place the roast into the hot skillet and sear until browned on both sides.
  • Transfer the browned roast to the crockpot. Pour the melted butter and browned bits remaining in the skillet over the beef.
  • Sprinkle the minced onion flakes over the top of the roast.
  • Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the beef.
  • Cut the remaining butter into pieces and place it over the roast. Add the whole pepperoncini peppers.
  • Cover and cook on LOW for eight hours or until the beef pulls apart easily with a fork.
  • Shred the tender roast into large pieces and stir it gently into the cooking juices.
  • Garnish with chopped parsley, if desired, and serve hot with some of the cooking liquid spooned over the beef.

Notes

  • Make sure the chuck roast is completely thawed before placing it in the crockpot.
  • For the most tender meat, cook the roast on low rather than trying to shorten the cooking time on high.
  • You can skip searing the beef when you’re short on time, although browning it first adds extra flavor.
  • Because the ranch and au jus packets already contain salt, use unsalted butter and season the raw beef lightly. Reduced-sodium seasoning mixes can also help control the final salt level.
  • There’s no need to add water or broth. The roast will release plenty of flavorful liquid during the eight-hour cooking time.
  • For easy serving, shred the roast directly in the slow cooker and toss the pieces through the warm cooking juices just before bringing it to the table.
