Ingredients

  • 3 cups cooked chicken shredded
  • 1 10.5-ounce can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 sleeve buttery crackers such as Ritz, crushed

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9-inch square baking dish with nonstick cooking spray.
  • Add the shredded chicken, cream of chicken soup, and sour cream to a large bowl. Stir until thoroughly combined.
  • Spread half of the chicken mixture evenly into the prepared baking dish.
  • Sprinkle half of the shredded cheddar cheese over the chicken.
  • Spread the remaining chicken mixture over the cheese, followed by the remaining cheddar.
  • Sprinkle the crushed buttery crackers evenly over the top.
  • Bake uncovered for about 30 minutes, or until the filling is bubbling around the edges and the topping is lightly golden.
  • Remove from the oven and allow the casserole to rest for 5 minutes before serving.

Notes

  • Rotisserie chicken is an easy shortcut and works especially well in this recipe.
  • Avoid adding much extra salt before tasting because the condensed soup, cheese, and crackers already contain sodium.
  • For make-ahead preparation, assemble the chicken and cheese layers up to one day ahead and refrigerate. Add the cracker topping immediately before baking.
  • Store leftovers covered in the refrigerator for up to 3 to 4 days.
