- 3 cups cooked chicken shredded
- 1 10.5-ounce can condensed cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 sleeve buttery crackers such as Ritz, crushed
Preheat the oven to 350°F. Lightly grease a 9-inch square baking dish with nonstick cooking spray.
Add the shredded chicken, cream of chicken soup, and sour cream to a large bowl. Stir until thoroughly combined.
Spread half of the chicken mixture evenly into the prepared baking dish.
Sprinkle half of the shredded cheddar cheese over the chicken.
Spread the remaining chicken mixture over the cheese, followed by the remaining cheddar.
Sprinkle the crushed buttery crackers evenly over the top.
Bake uncovered for about 30 minutes, or until the filling is bubbling around the edges and the topping is lightly golden.
Remove from the oven and allow the casserole to rest for 5 minutes before serving.
- Rotisserie chicken is an easy shortcut and works especially well in this recipe.
- Avoid adding much extra salt before tasting because the condensed soup, cheese, and crackers already contain sodium.
- For make-ahead preparation, assemble the chicken and cheese layers up to one day ahead and refrigerate. Add the cracker topping immediately before baking.
- Store leftovers covered in the refrigerator for up to 3 to 4 days.
