Servings 6 side-dish servings
- 4 cups cooked jasmine rice completely cooled and chilled
- 3 large eggs lightly beaten
- 3 tablespoons vegetable oil divided
- 1 tablespoon unsalted butter
- 1 small yellow onion finely diced (about ½ cup)
- 1 cup frozen peas and carrots thawed and drained
- 2 teaspoons minced garlic
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon toasted sesame oil
- ¼ teaspoon ground black pepper
- 3 green onions thinly sliced, white and green portions separated
Break apart any clumps in the cold, cooked rice and set aside.
In a small bowl, stir together the soy sauce and oyster sauce.
Heat one tablespoon of vegetable oil in a large skillet over medium heat. Add the beaten eggs and scramble until fully set. Transfer to a plate.
Add the remaining two tablespoons of oil to the skillet. Increase heat to medium-high. Add the yellow onion and white portions of the green onions. Cook for two to three minutes.
Stir in the peas and carrots. Cook for another two minutes until heated through and excess moisture evaporates.
Add the minced garlic and cook for 30 seconds, stirring constantly.
Add the chilled rice and spread it evenly throughout the skillet. Cook for three to four minutes, stirring occasionally.
Stir in the butter until melted and evenly distributed.
Pour the soy sauce mixture over the rice. Add the black pepper and toss everything together for one to two minutes.
Return the scrambled eggs to the skillet. Add the sesame oil and remaining green onions.
Stir for another minute until everything is combined and heated through.
Remove from the heat and serve immediately.
- Cold, day-old rice produces the best texture.
- Keep the skillet hot enough to fry the rice without burning the vegetables.
- Cook in batches if your skillet is too small.
- Add fully cooked chicken, shrimp, beef, or tofu for a heartier meal.
- Use low-sodium soy sauce to help control the saltiness.
- Refrigerate leftovers promptly and reheat thoroughly before serving.
