Ingredients
  

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 packet taco seasoning
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 can 10.5 oz cheddar cheese soup
  • 2 cups shredded cheddar cheese divided
  • 1 bag 28 oz frozen tater tots
  • Salt & pepper to taste
  • Optional toppings: sour cream green onions, diced tomatoes, jalapeños, avocado

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large skillet, cook beef and onion over medium heat until browned; drain fat.
  • Stir in taco seasoning, diced tomatoes, corn, and cheddar cheese soup. Mix until combined.
  • Spread mixture evenly in baking dish. Top with half the cheese, then arrange tater tots in a single layer.
  • Bake uncovered for 35–40 minutes, until tots are golden. Sprinkle remaining cheese on top and bake 5 more minutes.
  • Let rest for 10 minutes before serving. Add toppings as desired.
