- 1 lb ground beef
- 1 small onion chopped
- 1 packet taco seasoning
- 1 can 10 oz diced tomatoes with green chilies
- 1 cup frozen corn
- 1 can 10.5 oz cheddar cheese soup
- 2 cups shredded cheddar cheese divided
- 1 bag 28 oz frozen tater tots
- Salt & pepper to taste
- Optional toppings: sour cream green onions, diced tomatoes, jalapeños, avocado
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large skillet, cook beef and onion over medium heat until browned; drain fat.
Stir in taco seasoning, diced tomatoes, corn, and cheddar cheese soup. Mix until combined.
Spread mixture evenly in baking dish. Top with half the cheese, then arrange tater tots in a single layer.
Bake uncovered for 35–40 minutes, until tots are golden. Sprinkle remaining cheese on top and bake 5 more minutes.
Let rest for 10 minutes before serving. Add toppings as desired.
