This cabbage soup with sausage and potatoes is perfect for kids and adults alike. You can serve it as a side dish or as the centerpiece of the meal – there will be more than one repeat of this dish!
Succulent Cabbage Soup with Sausage and Potatoes
Ingredients
1/2 kilo of smoked sausage cut into bite-size pieces
2 tablespoons olive oil
3 medium leeks cut into slices
2 medium carrots peeled and diced
1 celery stalk cut into cubes
1 small green cabbage cut into bite-size pieces
3 cloves garlic, minced
6 cups chicken broth
1/2 kilo of diced red potatoes
1 tablespoon of thyme and oregano
1 bay leaf
Salt and freshly ground black pepper
Preparation
Add the sausage to a large pot and cook over medium heat for 5-6 minutes, stirring occasionally. Then transfer to a plate and set aside
Pour the olive oil, leeks, carrots and celery to the pan and combine. Sauté for 5 minutes and add the cabbage and garlic, cook for 4 more minutes.
Stir in the broth, potatoes, thyme, oregano, bay leaf, cooked sausage, and combine. Bring to a boil over medium-low heat, cover and cook for 15 minutes or until the potatoes are cooked and tender. Season with salt and pepper as needed.
Serve hot or refrigerate in sealed containers for up to 3 days, or freeze for up to 3 months.
