Ingredients:

  • 450g chicken breasts (2-3 breasts), trimmed
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 tsp garlic powder
  • 2 packets chicken gravy mix (28g each)
  • 1⁄2 tsp black pepper
  • 475ml water
  • 1⁄2 tsp poultry seasoning

For Serving (Optional):

  • Mashed Potatoes
  • Butternut Squash
  • Crusty bread

Instructions:

  1. Place the chicken breasts in the crockpot insert.
  2. In a medium bowl, stir together the cream of chicken soup, garlic powder, chicken gravy mix, black pepper and poultry seasoning until well combined. Pour the mixture over the chicken. Recipe by Ineskohl.info
  3. Pour in the water and mix briefly to combine everything.
  4. Cover and cook on LOW for 6-8 hours.
  5. After cooking, use two forks to break apart the chicken into smaller pieces. Stir the chicken pieces into the gravy.
  6. Serve the chicken and gravy over mashed potatoes, with butternut squash on the side and crusty bread.

Mashed Potato Ingredients:

  • 1.3kg russet potatoes, peeled and chopped
  • 1⁄2 tsp garlic powder
  • 115g unsalted butter
  • generous pinch kosher salt
  • 120-160ml heavy cream or milk
  • pinch black pepper

Butternut Squash Ingredients:

  • 1 large butternut squash, peeled, seeded and chopped
  • 1 tbsp white sugar
  • kosher salt
  • 3 tbsp unsalted butter
  • ground cinnamon

Make mashed potatoes and butternut squash according to your usual methods. Serve alongside the saucy, tender chicken and gravy.

Tips:

  • Use bone-in, skin-on chicken thighs if you want richer flavor and a fattier gravy. The bones and skin will impart more taste as they slowly cook.
  • Brown the chicken or onions first for deeper flavor before adding to the slow cooker. It’s an extra step but worth it for more savory gravy.
  • Use low-sodium chicken broth instead of water for a boost of chickeny taste. Swapping equal parts broth for the water adds nice flavor.
  • Sprinkle a bit of flour over the chicken before adding the other ingredients. This will help thicken your gravy nicely.
  • Mash some of the cooked chicken into the gravy with a potato masher or fork before serving. It will help make the gravy even thicker and richer.

    Just made this recipe for dinner. I used 3 chicken breasts and they were cooked perfectly at 5 hours. The gravy had a great flavor but was too watery. I added cornstarch slurry 2 times but it didn’t thicken to a gravy consistency. Will make again if I can figure out how get the gravy thick enough.
