Ingredients:

  • 2 jars of Alfredo sauce
  • 1 packet of Ranch seasoning
  • 1 tsp Adobo seasoning
  • 1 tsp Garlic powder
  • 2 tbsp Butter
  • 1 tsp Paprika
  • 1 tsp Black pepper
  • 1 tbsp Parsley (chopped)
  • 1 tsp Chicken bouillon seasoning
  • 1 tsp Tony’s creole seasoning
  • 1 tbsp Minced garlic
  • 1 cup Mozzarella cheese (shredded)
  • 1 cup Monterrey Colby jack cheese (shredded)
  • 16 oz Rotini noodles
  • 2 tbsp Olive oil
  • 8 slices of bacon

Instructions:

  1. Preparation: Begin by collecting all your ingredients. Preheat the oven to 375°F (190°C).
  2. Season Chicken: Pat dry your chicken pieces. Season with adobo, garlic powder, chicken bouillon, Tony’s creole seasoning, paprika, black pepper, minced garlic, and parsley. Ensure you rub these in well for an even flavor.
  3. Sauté Chicken: In a skillet over medium heat, melt a tablespoon of butter with a tablespoon of olive oil. Add chicken pieces and cook until they turn a beautiful golden brown. Reduce the heat, stir in the ranch seasoning, and set aside.
  4. Cook Bacon: While chicken is cooking, cut the bacon slices into halves. In another pan, fry until crispy. Set aside.
  5. Boil Noodles: In a large pot, bring water to a boil. Add a pinch of salt and a tablespoon of olive oil. Add rotini noodles and cook until tender but not overcooked. Drain and set aside.
  6. Prepare Alfredo Sauce: In a large mixing bowl, combine both jars of Alfredo sauce. If you cannot find Cajun Alfredo, sprinkle in some Cajun seasoning for that spicy kick. Mix well.
  7. Layering: In a baking dish, smear a small amount of Alfredo sauce to coat the bottom. Next, evenly layer in the cooked noodles, followed by the sautéed chicken. Pour the Alfredo sauce mixture ensuring even coverage. Press down gently to settle the layers.
  8. Cheese and Bacon: Sprinkle shredded mozzarella cheese over the top. Crumble the crispy bacon pieces and scatter on top of the mozzarella. Finally, generously layer with the Monterrey Colby jack cheese.
  9. Bake: Place the baking dish in the preheated oven and bake for about 30 minutes or until the cheese on top becomes bubbly and slightly golden.
  10. Serve: Once out of the oven, let it cool for a few minutes. Dig in and enjoy the layers of creamy, cheesy goodness!

Tips & Tricks:

  • Pasta Texture: For an optimal bite, ensure you cook the rotini noodles al dente. This prevents the pasta from becoming too soft when baked with the sauce.
  • Customization: If you’re a fan of veggies, consider adding cooked broccoli or bell peppers for an added crunch and nutrition boost.
  • Cheese Choices: Feel free to experiment with other cheeses like cheddar or gouda. Each brings its unique flavor and melting quality.
  • Storing: If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
  • Serving Suggestion: Serve this creamy dish with a side of garlic bread or a refreshing green salad to balance out the rich flavors.
