  • 12 oz fettuccine or penne pasta
  • 1 Tbsp vegetable oil
  • 1/3 cup white wine (Chardonnay recommended)
  • 1 small onion, finely chopped
  • 1 lb shrimp, peeled and deveined
  • 1 garlic clove, minced
  • 2 Tbsp unsalted butter
  • Salt & pepper to taste
  • 1/3 cup grated Parmesan cheese
  • A dash of paprika
  • 2 cups heavy whipping cream
  • Fresh parsley or basil for garnish, if desired

Instructions:

  1. Cook the Pasta: Start by cooking the fettuccine pasta in a large pot of salted boiling water as per the package instructions until al dente. Drain the pasta but avoid rinsing it, as this will help the sauce cling better.
  2. Prepare the Shrimp: Pat the shrimp dry using paper towels. Season them with 1/2 tsp salt, a dash of paprika, and 1/4 tsp black pepper. Stir to coat evenly.
