Ingredients:

  • 1 3/4 cups (210 grams) of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 1 1/2 teaspoons of cinnamon
  • 1/2 teaspoon of allspice
  • 1/4 teaspoon of ground ginger
  • 1/4 teaspoon of freshly ground nutmeg
  • 1/2 cup (120 mL) of vegetable oil
  • 2/3 cup of granulated sugar
  • 1/2 cup (100 grams) of light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon of vanilla extract
  • 1 1/3 cups of pure pumpkin purée (not pumpkin pie mix)
  • 1/3 cup of whole milk (alternatives: almond milk or even water)

Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 350°F.
  2. Prepare the Loaf Pan: Line your nine by five-inch loaf pan with parchment paper for easy removal. Alternatively, butter and flour the pan, or use a baking spray.
  3. Combine Dry Ingredients: In a large bowl, sift together the all-purpose flour, baking soda, salt, baking powder, cinnamon, allspice, ground ginger, and nutmeg. Whisk the ingredients until they are well combined.
