Stuffed Bell Peppers

Everybody knows the great classics that are stuffed tomatoes ? Well for my part I tend to prepare stuffed peppers, which I love ? Here, a very simple recipe with a bolognese style stuffing that is sure to please the whole family!

Ingredients for 2 people:

  • 2 large red peppers
  • 250 g of ground beef at 5% fat content
  • 1 onion
  • 400 g of tomato puree (or a large can of peeled tomatoes)
  • 1 tsp. double tomato paste
  • 1 clove of garlic
  • 100 g raw basmati rice
  • 1 handful of rinsed fresh parsley
  • Salt & pepper
  • Optional: 1 handful of grated Gruyere cheese

Preparation :

1- Bring a pot of boiling salted water to the boil, and cook your rice as indicated on the packet, reducing the cooking time by 2 minutes so that it remains a little hard. Drain and set aside.

2- Peel and chop the onion and garlic clove. Chop the fresh parsley. Set aside.

3- In a non-stick pan, make the minced meat a few minutes over high heat, then remove it from the pan.

4- Preheat your oven to 200°C.

5- In the same pan, fry the chopped onion for 8 minutes over medium heat, stirring regularly. You can add a little water if it gets sticky. Then add your tomato purée, parsley, tomato paste, garlic, salt, and pepper. Mix and simmer for 5 minutes (10 minutes if using peeled tomatoes).

6- Meanwhile, wash and cut your peppers lengthwise. Seed them.

7- In the bottom of an ovenproof dish, spread half of the tomato sauce and place your bell pepper halves on top.

8- Add the ground meat and cooked rice to the other half of the tomato sauce. Mix and let it heat up for another 2 minutes. Then generously garnish your peppers with this mixture.

9- Cover the dish with aluminum foil and bake in the oven for 30 minutes at half height.

10- Once this time has elapsed, remove the aluminum foil, and if you wish, sprinkle your peppers stuffed with grated Gruyere cheese. Return to the oven under the grill for 2 minutes, just long enough for the cheese to melt.
