  • 1 stick of salted butter, melted (equivalent to 1/2 cup or 4 oz)
  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 can (15.25 oz) whole kernel sweet corn, drained
  • 1 can (14.5 oz) creamed corn
  • 1 large egg
  • 1 cup sour cream
  • 1/4 cup chopped green onions (both white and green parts)
  • 1/2 teaspoon sugar
  • Pepper to taste (optional)
  • Non-stick spray or butter for greasing


  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Mix: In a large mixing bowl, pour in the melted butter.
  3. Add Corns: First, incorporate the creamed corn. If you’re using whole kernel corn as a substitute, blend or pulse it in a food processor for a similar texture. Then, mix in the drained whole kernel sweet corn.
