  •     1 clove of garlic
  •     4 tablespoons of olive oil
  •     1 sprig of basil
  •     1 dessert spoon of sugar
  •     1 dessert spoon salt
  •     1 pinch freshly ground black pepper

How to make Tomato and basil sauce:

Wash the tomatoes and peel them. Cut them in half and remove the seeds and the water they release. Cut the halves into pieces and crush them with an electric blender. Set aside.

Tip: To peel the tomatoes you can make a cross with a knife at the base and blanch them in boiling water for 2 minutes.

Peel the onions and garlic clove and finely chop both ingredients. These ingredients will add more flavor to the tomato and basil sauce, but you can always add leek or other products that you like. (Ineskohl Kitchen)

Add the 4 tablespoons of olive oil in a large pot, put it on the heat, and, when it is hot, sauté the onion and garlic until the onion is a more transparent color.

While the onion and garlic are frying, wash the basil sprig well, form a ball with the leaves and cut it with a sharp knife.

Once the onion and garlic are poached, add the crushed Tomato.

Add the teaspoon of sugar, the teaspoon of salt and sprinkle the freshly ground black pepper on top. The sugar is necessary to counteract the acidity of the Tomato, while the salt and pepper will enhance the flavors of the tomato and basil sauce.

Add the chopped basil, stir and simmer the sauce over low heat for 20 minutes. Stir from time to time and taste the sauce a few minutes before the end of the cooking time to correct the salt or sugar if necessary.
